At the center of it all: hand-pulled noodles. Made fresh in our open kitchen, each strand is skillfully stretched and folded from a wheat flour dough, creating that unmistakably smooth, springy texture only hand-pulling can achieve. Every bowl is a tribute to technique, time, and taste.

But San Wan is more than just noodles. From fiery chili cucumber salads and soulful chicken wontons to our signature Xi’an-style lamb burger nestled in a perfectly charred bao, every dish is thoughtfully prepared, generously portioned, and rooted in bold Chinese flavors.
