Dhiraj Dargan is the Brand Chef at Comorin, where he leads the culinary vision and drives all new openings for the brand. An IHM Pusa graduate, Chef Dhiraj began his professional journey in 2003 with Old World Hospitality, steadily rising to the position of Executive Sous Chef at Indian Accent, one of India’s most globally celebrated restaurants. With over 17 years of diverse culinary experience, he is known for his innovative approach, modern sensibility, and deep understanding of both Indian and global cuisines. At Comorin, his focus lies in reimagining Indian comfort food while spotlighting lesser-known regional flavours and pairings through thoughtful, contemporary menus.
Throughout his career, Chef Dhiraj has worked across hotels, fine dining, casual dining, and cruise operations in India, the UK, and the US, leading large kitchen teams and nurturing young culinary talent. Instrumental in the success of Indian Accent and now at the helm of Comorin, he brings strong expertise in menu strategy, new project development, cost efficiencies, and profitability, all while maintaining a sharp focus on guest experience. A true people’s person, he values collaboration and continuous learning, and when not in the kitchen, he enjoys reading and exploring emerging culinary technologies that shape the future of food.

Part of the hospitality group EHV International, it offers a curated menu featuring items like Lemon Gunpowder Idli, Himachali Cha Gosht, and Aam Ki Kadhi. The restaurant also boasts a creative bar program with house-made infusions, craft cocktails, and a curated wine selection. Its ambience is vibrant yet relaxed, with communal seating and a serene indoor garden area called The Orangery. Comorin is ideal for casual meals, business lunches, or special occasions, offering a mid-to-premium dining experience.
