Chef Anand Morwani is a Mumbai-based restaurateur and chef driven by instinct, precision, and a lifelong love for hosting. Born into a family of doctors, he chose a different kind of discipline—one shaped by knives, heat, music, and memory. From an early age, food was central to his world, and by thirteen, he knew he wanted to build restaurants that felt alive, not just impressive.
Formally trained at Les Roches, Switzerland, and Le Cordon Bleu, London, Morwani honed his craft across global kitchens before returning home to carve his own path. His early venture, BrewBot, helped redefine Mumbai’s casual dining culture. In 2020, he unveiled Gaijin, a bold Japanese restaurant seen through the lens of an outsider—fearless, immersive, and deeply intentional.
At Gaijin, Morwani blends classical technique with irreverent creativity, creating experiences that engage all the senses. For him, food is not just flavour—it’s feeling, rhythm, and memory.
