Chef Gresham Fernandes
Chef Gresham Fernandes is the Culinary Director at Impresario Entertainment & Hospitality and one of Mumbai’s most respected voices in contemporary European cuisine. An Andheri-born chef, he is also the co-owner of the iconic Salt Water Café, Bandra, a restaurant celebrated for its enduring appeal and comforting, familiar flavours. A graduate of Rizvi College of Hotel Management, Gresham began his career with The Leela before joining Riyaaz Amlani’s Salt Water Grill in 2004, steadily rising through the ranks on merit. Over the years, he has played a key role in shaping menus, training teams, designing kitchens and driving the creative direction across several of Impresario’s restaurant brands.
Known for his philosophy of “complex simplicity,” Chef Gresham focuses on honest, well-executed food that patrons return to time and again. Alongside his culinary work, he is deeply engaged with issues of sustainability, minimising food waste and supporting Indian farmers through thoughtful sourcing practices. A hands-on chef-administrator, Gresham balances creativity with consistency, making him a defining force behind some of Mumbai’s most loved dining destinations.
