Chef Marques Tone

Chef Marques Tone is the Head Chef at COYA Dubai with over 15 years of global culinary experience, having worked in leading kitchens across London, Mumbai, and Dubai. Born in India, he began his career at Gordon Ramsay’s restaurant in London and later moved to Dubai, where he held senior roles in prestigious fine-dining establishments. He holds a Bachelor’s degree in Hotel & Tourism Management and a Postgraduate Diploma in Culinary Arts from West London College. Specializing in Peruvian cuisine infused with French and Japanese techniques, he joined COYA Dubai in 2014 and returned as Head Chef in 2023. Under his leadership, COYA Dubai earned recognition in the Gault & Millau UAE Guide and was named World’s Best Peruvian Cuisine Restaurant 2023.
