Formerly the Executive Chef at Taj Palace, New Delhi for over 20 years, he has led iconic kitchens and mentored generations of chefs.
He spearheads IHCL’s flagship restaurant brand LOYA, with successful presence at Taj West End, Bengaluru and The Taj Mahal Palace, Mumbai, celebrating North Indian culinary heritage.
A respected culinary ambassador, Chef Wadhwa has curated state banquets for global leaders and represented India at prestigious platforms like the World Economic Forum.

LOYA is a refined North Indian dining destination that brings the rich culinary heritage of regions like Punjab, Kashmir, and the Himalayan foothills to life. Rooted in age-old techniques such as dum, dhungar, and baghar, the menu celebrates authenticity while embracing a contemporary expression.

Under the guidance of Chef Rajesh Wadhwa, LOYA presents a thoughtfully curated selection of dishes—from earthy vegetarian creations to robust meats and coastal flavours—each crafted with depth, warmth, and precision. Signature elements like hand-pounded spices and slow-cooking traditions add layers of flavour and nostalgia to every plate.

Complementing the cuisine is the Vriksh cocktail programme, inspired by India’s botanical richness, offering unique blends with ingredients like saffron, ginger, and betel leaf.
