The Restaurant

Nestled within one of Mumbai’s historic textile mills, Masque is an ingredient-driven fine dining restaurant founded by entrepreneur Aditi Dugar, with Head Chef Varun Totlani leading the kitchen. Renowned for introducing India’s first 10-course chef’s tasting menu, Masque seamlessly blends tradition with modern culinary innovation. The menus evolve with the seasons, shaped by ingredients sourced from local farmers, artisanal producers, and foraging expeditions, reflecting a deep commitment to seasonality and craftsmanship. Expanding this philosophy is Masque Lab, launched in 2020—a 1,250-square-foot space dedicated to culinary research and experimentation. Here, ingredients are studied, aged, and paired to explore new expressions and cultural connections. Transforming into an intimate 12-seat dining experience, the Lab offers guests a rare insight into the creative process through bespoke menus and exclusive monthly dinners. Together, Masque and Masque Lab stand as a benchmark for boundary-pushing cuisine, innovation, and world-class hospitality in India.
