Chef Lakhan Jethani
Chef Lakhan Jethani is the co-founder and head chef of Mizu Izakaya, an award-winning Japanese restaurant in Bandra, Mumbai, known for its refined yet evolving take on Japanese cuisine. He entered the hospitality industry at just 16 and worked across multiple departments before discovering his true calling in the kitchen. His earliest memory of cooking dates back to age 12, when he prepared tomato baskets for his tuition classmates, sparking a lifelong passion for food. Drawn to Japanese culture and culinary philosophy, Lakhan travelled to Japan to train and immerse himself in its traditions. In 2019, he opened Mizu with his school-time friend and business partner, Vedant Malik. The name “Mizu,” meaning water, reflects his culinary values of flow, adaptability, and progression. His food balances authenticity with personal expression, moving beyond sushi and ramen to showcase the depth of Japanese cuisine. Known for his precise technique and thoughtful flavours, his dishes reflect both discipline and creativity. Despite not being fluent, he understands Japanese well and embodies its culinary spirit. Today, Chef Lakhan continues to redefine Japanese dining in India with honesty, passion, and respect for the culture.
