Joining Masque in 2016, Totlani rose through the ranks to become Head Chef in 2022, helping strengthen the restaurant’s position as one of India’s most influential dining destinations. At Paradox, he explores a freer, playful expression of his cuisine—creating unconventional, high-energy dishes designed to pair seamlessly with a progressive cocktail program.
